Those youtube to mp3 sites were the ones I primarily used when I was still downloading music. Just have to use an adblocker when using them. I eventually caved and bought spotify when my last phone died with 1k+ songs T_T.

I use NewPipe on my phone to download music. I have a music playlist on my YouTube account that I manage from my PC. I saved this playlist on NewPipe, an app that lets you watch and also download YouTube videos without needing an account. You can download videos as MP4 or audio files like M4A.
The way it works for me is simple: I add new music to my YouTube playlist from my PC, and then I can download those tracks on my phone using NewPipe whenever I have time. The highest quality available for audio downloads is 160kbps in the Opus format.
This setup works really well for me. It’s a great solution for downloading music without needing a separate website or service.
HOWEVER, you cannot watch or download videos, that are age restricted. That’s the biggest downside to me, next to the endless supply of Error messages. Usually, for the first few weeks after an update, the app runs smoothly. However, at some point—at least for me—error messages start popping up whenever I try to download or even watch a video. I often have to retry several times before it works. As more days pass, these error messages become more frequent. I feel like this happens because the app’s build becomes too old for YouTube, which probably updates more frequently. I don’t know the first thing about programming tho, so who knows. Just so you know what you’d be getting into👍
Freya-JS can be fed Spotify or Apple Music albums/songs/playlists and will grab the music from Youtube Music and automatically handle the tags and metadata. Additionally a soulseek client like Nicotine+ is good for more popular songs.
I mostly use RiMusic on my phone.
If you want full discographies torrenting sites are usually the best (thepiratebay / nyaa.si). Depends on what you want to get though.
Try Nicotine+ (open source version of Soulseek). It’s still the best out there and easy as shit to get started with.
Youtube-dlp is THE WAY to download video and audio from pretty much every site on the planet. Over 99k stars on Github! It natively uses the command line. You can download individual videos, music, playlists, and even entire channels.
If you want a GUI for it, there are plenty available. I use the TarTube GUI. Very full-featured, highly recommend.
